Pita bread recipe (Πίτες για γύρο)

Making (and eating) pita bread is one of our favorites. You can eat it with homemade gyros or as a dip or even make small pizzas on them. It is a very easy recipe!

1 packet instant yeast (or around 6 grams)

1 teaspoon sugar

¼ cup of milk, lukewarm (can be dairy free if lactose intolerant or replaced with water if not a milk fan)

¾ cup of water, lukewarm

2 and 1/3 cups all-purpose flour (more if needed)

1 teaspoon salt

1-2 tablespoons olive oil or melt butter


In a bowl we put the water, the milk, the sugar and the yeast. We let it rest for 5-10 mins till small bubbles start to form.


We add then the rest of the ingredients and we knead till we have a nice elastic dough that does not stick to hands (if it sticks, we add more flour, if it is too hard, we add a bit of water). We can also use a dough mixer if we do not want to knead.


Once ready, we cover the dough and let it rest for one hour approximately or till it doubles in size. Once it does, we knead once more, and we form approximately 6-7 small balls of equal size. With a rolling pin we roll the balls to circles of approximately ½ cm height. We let them rest for 10 mins. We take a nonstick pan and put it on medium fire. We cook the pitas approximately 1-2 minutes on each side (or till they get slight brown spots).
